Former Asia’s Best Female Chef and Tate Dining Room chef-owner Vicky Lau has teamed up with co-founder Romain Hertebreau to open Mora, an intimate 28-seat French-Chinese restaurant at an iconic location in Hong Kong. With a menu entirely built on soy products, Mora seeks to modernise the way we view and consume the humble soybean, presenting creative dishes using Lau’s French and Chinese knowhow.
