Nestled into the historic street of Upper Lascar Row, 摩 Mora embodies the surprising, harmonious capacities of contrasting ingredients and textures. At Mora, we have a strong commitment to sustainability and proudly focus on using local, sustainable ingredients in our dishes.

 

Mora's hyper-seasonal menu is defined by the versatility of soy - a pinnacle ingredient that is pillar to Asian culinary tradition. Stemming from Chef Vicky Lau's French x Chinese cooking roots, Mora's dishes are texture-focused with recipes that highlight precious ingredients through the manipulation of soy. House-made soy products from milks to tofu, soy is presented as a foundational element of immense possibility to transform and transport other ingredients across the culinary spectrum.
 

Pairing the menu is a curated beverage list with wines, sakes, and teas. A peaceful stroll in the neighborhood becomes a transportive escape at Mora. Mora is a place for hering and community, bringing together all minds to share in the diversity and tradition of what soy can bring to a curious palate.

At Mora we utilise a global perspective to introduce and preserve the cultural significance of soy in Asian cuisine.  This dual perspective inspires the menu and environment.

 

As a totally immersive restaurant, Mora coexists within our neighbourhood community as a timeless establishment.

 

Through a marriage of time-tested traditions and modern technology, soy products including milks and tofu are made in-house using a carefully researched bean-to-pulp extractor specified to the culinary goals of our chef.

 

As the prime,  multi-faceted ingredient, soy  acts as a shepherd for the wide variety of  dishes – a key carrier of subtle enhancements to flavour and texture.  Discovering the  results will be a surprise that pays tribute to the rich culinary history of the humble soy bean.
