Chef Vicky Lau
Chef-proprietor Vicky Lau is a woman of few words, but through cooking, she expresses her deepest emotions, curiosity and wildest imaginations. Her artistic background led to a path to cuisine through the realisation that the plate could be a canvas for her artistic intuition. Searching for perfection in all aspects of her work, she is on a permanent quest to discover and reimagine flavours and textures that result in gustatory revelation.
Within a short period, Vicky has established herself to be a veteran of the industry, most notably earning Asia’s Best Female Chef 2015, maintaining 1 Michelin Star since opening and rising to 2 stars in 2021, while also being a member of the Relais & Châteaux properties and board member of Feeding Hong Kong.
Chef Percy Ho
With a passion for cooking that started from a young age, Chef Percy Ho heads up the kitchen of MORA, the latest modern French Chinese restaurant venture by award-winning Chef-Proprietor Vicky Lau.
Percy’s father, a former dim sum chef, imbued in him a love for cooking from the age of 10 years old, passing on generations of cooking knowledge derived from his father, and even his father’s father. Over the years of cooking at home for his family, Percy’s fondest memories includes visiting the local wet markets to pick up the freshest seasonal produce.
His passion for the culinary arts naturally progressed him into a professional full-time career in the kitchen, with his first stint at Neighborhood by David Lai, a top 20 restaurant on the current list of Asia’s 50 Best Restaurants. He moved on to Fish School, where he honed his skills in innovative Western cooking and seafood preparation with Chinese techniques, before joining the celebrated Chef Vicky Lau at two-Michelin-starred TATE Dining Room as Chef de Partie.
Percy’s perseverance and hard work saw him moving quickly up the kitchen ladder, starting with his promotion to Junior Sous Chef and finally to the esteemed role of Sous Chef. Now, after three years of working and learning under Chef Vicky, Percy is appointed the Head Chef of Mora Hong Kong, an intimate modern French Chinese restaurant that champions soy products prepared with French-inspired cooking techniques.
Hailing from the balmy South of France and with a presence all over the world, Romain Herbreteau has built a colorful career on his passion for F&B service and hospitality. With over a decade of F&B service training and job experiences in France, UK, Spain, Japan, and now Hong Kong, Herbreteau has worked his way from the bottom-up to become a true industry jack-of-all-trades.
In 2014, Herbreteau’s hospitality services were called upon by Dominique Bouchet in Tokyo, Japan, to assist in the restaurant’s opening in the city’s prestigious Ginza district. His responsibilities ranged from designing the food and wine concept, maintaining supplier relations to staff training and quality control. Dominique Bouchet opened its doors to high critical acclaim, receiving two Michelin stars after only four months into operations. Herbreteau continued to move up the ladder at Dominique Bouchet Group, leading pop-up events and new restaurant openings under the group as General Manager, before finally rising to the role of Director of Operations in 2019.
With around 15 years of service experience in the Hong Kong fine dining scene, Ho has developed a strong sense of hospitality and culinary knowledge.
From The Peninsula to Amber at The Mandarin Oriental, Ho has been serving Hong Kong dinners at high end hotels with passion and dedication.
